Ingredients

  • 1/4 cup unsweetened coconut flour
  • 1/2 cup butter, softened
  • 1/4 cup erythritol sweetener
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/4 cup dried cranberries, chopped
  • 1 tablespoon orange zest
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine almond flour, coconut flour, erythritol, salt, and baking powder.
  3. In another bowl, cream together butter, vanilla extract, and almond extract.
  4. Gradually mix the dry ingredients into the butter mixture.
  5. Add chopped cranberries and orange zest, mix well.
  6. Form the dough into cookie shapes and place on a baking sheet.
  7. Bake for 12-15 minutes or until lightly golden.
  8. Allow cooling before serving.
