Description

Delicious steak and rice bowls topped with colorful vegetables and fresh avocado.


Ingredients

Scale
  • 1 lb flank or sirloin steak
  • 1 cup white or brown rice
  • 1 cup bell peppers (mixed colors)
  • ½ medium red onion
  • 1 avocado
  • ¼ cup fresh cilantro
  • 2 lime wedges
  • Salt and pepper to taste
  • 1 tbsp olive oil for sautéing

Instructions

  1. Prepare the Rice: Cook the rice according to package instructions; add salt and garlic powder if desired.
  2. Cook the Steak: Season steak with salt and pepper. Heat a skillet over medium-high heat, sear each side for 4-5 minutes until browned; let it rest before slicing.
  3. Sauté the Vegetables: In the same skillet, add olive oil and sauté bell peppers and onions for 3-4 minutes until slightly softened.
  4. Assemble Bowls: Layer fluffy rice in each bowl, followed by sliced steak and sautéed vegetables.
  5. Add Toppings: Top with avocado slices, fresh cilantro, and a squeeze of lime juice.
  6. Serve & Enjoy: Serve immediately or family-style for everyone to dig in.
