- 1 lb lean ground beef
- 2 cups butternut squash, peeled and diced
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 2 tsp cumin
- 1 tsp smoked paprika
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh herbs (parsley or cilantro) for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Toss the diced butternut squash with olive oil, salt, pepper, cumin, and paprika in a bowl.
- Spread the seasoned squash on a baking sheet and roast for 25-30 minutes until tender.
- In a skillet over medium heat, sauté onions in olive oil until translucent; add minced garlic.
- Increase heat and add ground beef, cooking until browned (6-8 minutes).
- Combine the roasted squash with the beef mixture; adjust seasoning as needed.
- Serve hot in bowls garnished with fresh herbs.
