Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper or silicone mats.
- In a large mixing bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs one at a time, then mix in the sour cream and vanilla until fully combined.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry mixture into the wet ingredients, mixing until a soft, sticky dough forms.
- Cover and chill the dough for at least 1 hour.
- Using a cookie scoop, portion dough onto prepared baking sheets, leaving space between each.
- Bake for 10-12 minutes, until edges are set but centers remain soft.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a cooling rack.
- While cookies cool, prepare the frosting by beating butter until creamy, then gradually adding powdered sugar, vanilla, and milk until desired consistency is reached.
- Add food coloring if desired.
- Frost cooled cookies with an offset spatula or butter knife.
- Immediately top with rainbow sprinkles before the frosting sets.
- Let frosting set before storing or stacking.
