Description

These delightful cookies are soft and topped with a creamy buttercream frosting, perfect for any occasion.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 2 large eggs
  • ½ cup sour cream
  • 1 tablespoon vanilla extract
  • 3 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup unsalted butter, softened
  • 3 cups powdered sugar
  • 2 to 3 tablespoons milk or cream
  • 1 teaspoon vanilla extract
  • Food coloring (optional)
  • Rainbow sprinkles for topping

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper or silicone mats.
  2. In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, then mix in the sour cream and vanilla until fully combined.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry mixture into the wet ingredients, mixing until a soft, sticky dough forms.
  6. Cover and chill the dough for at least 1 hour.
  7. Using a cookie scoop, portion dough onto prepared baking sheets, leaving space between each.
  8. Bake for 10-12 minutes, until edges are set but centers remain soft.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a cooling rack.
  10. While cookies cool, prepare the frosting by beating butter until creamy, then gradually adding powdered sugar, vanilla, and milk until desired consistency is reached.
  11. Add food coloring if desired.
  12. Frost cooled cookies with an offset spatula or butter knife.
  13. Immediately top with rainbow sprinkles before the frosting sets.
  14. Let frosting set before storing or stacking.
