Delicious red velvet cheesecake bites that are perfect for any occasion!
Ingredients

- 1 cup all-purpose flour
- 2 tablespoons unsweetened cocoa powder
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup unsalted butter, melted
- 1/4 cup buttermilk
- 1 tablespoon red gel food coloring
- 1 teaspoon vanilla extract
- 8 ounces cream cheese, softened
- 1/3 cup powdered sugar
- 1/2 teaspoon vanilla extract (for cheesecake layer)
Instructions
- In a mixing bowl, beat the softened cream cheese until smooth.
- Add powdered sugar and vanilla extract, mixing until creamy. Set aside.
- In another bowl, whisk melted butter and granulated sugar.
- Add eggs, vanilla, and red gel food coloring.
- Stir in flour, cocoa powder, and salt until just combined.
- Mix in the buttermilk until the batter is smooth.
- Preheat oven to 350°F and grease a mini muffin pan.
- Spoon 1 tbsp of red velvet batter into each cavity.
- Add 1 tsp of cheesecake mixture to the center.
- Top with a small dollop of batter and swirl with a toothpick.
- Bake for 15–17 minutes, until set.
- Cool in pan, then transfer to wire rack and serve.
Notes
- These bites are best served fresh but can be stored in the refrigerator for up to 3 days.
- For a festive touch, top with whipped cream or sprinkles before serving.
