Description

Delicious red velvet cheesecake bites that are perfect for any occasion!


Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons unsweetened cocoa powder
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup buttermilk
  • 1 tablespoon red gel food coloring
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese, softened
  • 1/3 cup powdered sugar
  • 1/2 teaspoon vanilla extract (for cheesecake layer)

Instructions

  1. In a mixing bowl, beat the softened cream cheese until smooth.
  2. Add powdered sugar and vanilla extract, mixing until creamy. Set aside.
  3. In another bowl, whisk melted butter and granulated sugar.
  4. Add eggs, vanilla, and red gel food coloring.
  5. Stir in flour, cocoa powder, and salt until just combined.
  6. Mix in the buttermilk until the batter is smooth.
  7. Preheat oven to 350°F and grease a mini muffin pan.
  8. Spoon 1 tbsp of red velvet batter into each cavity.
  9. Add 1 tsp of cheesecake mixture to the center.
  10. Top with a small dollop of batter and swirl with a toothpick.
  11. Bake for 15–17 minutes, until set.
  12. Cool in pan, then transfer to wire rack and serve.
