- 1 cup coconut sugar
- 1 cup unsweetened applesauce
- 1 cup coconut milk (full-fat)
- 2 tsp baking powder
- 2 tsp vanilla extract

Instructions
- Preheat your oven to 350°F (175°C) and grease two 6-inch round cake pans.
- In a large mixing bowl, whisk together almond flour, coconut sugar, baking powder, and salt until well combined.
- Stir in unsweetened applesauce, coconut milk, and vanilla extract until smooth.
- Divide the batter evenly between the prepared pans.
- Bake for 25-30 minutes or until a toothpick inserted comes out clean.
- Let cakes cool in their pans for about 10 minutes before transferring them to wire racks to cool completely.
- Frost with your favorite vegan frosting or enjoy plain.
