Apple Walnut Salad

Description

A refreshing and crunchy apple walnut salad.


Ingredients

Scale
  • 2 medium Granny Smith apples, (diced, about 2 cups)
  • 1 tablespoon granulated sugar
  • 2 teaspoons lemon juice
  • 2 medium ribs celery, (diced, about 1 cup)
  • 1 cup (151 g) red seedless grapes, (halved)
  • ½ cup (58 g) toasted walnuts, (roughly chopped)
  • ¼ cup (59 g) heavy whipping cream
  • ¼ cup (58 g) mayonnaise
  • ½ teaspoon kosher salt

Instructions

  1. To a large bowl, add diced apples, sugar, and lemon juice. Toss gently to coat the apples evenly.
  2. Add the celery, grapes, and walnuts to the bowl with the apples. Gently mix to combine.
  3. In a medium bowl, use a hand mixer or whisk to whip the heavy whipping cream until stiff peaks form.
  4. Once the cream is whipped, gently fold in the mayonnaise until the mixture is smooth and creamy.
  5. Pour the whipped cream mixture over the apple mixture. Sprinkle with salt, then gently fold everything together until evenly combined.
  6. Cover and refrigerate for at least 1 hour or overnight, until chilled.
  7. Serve cold.

  • This salad can be made a day in advance.
