  • 1 pound Andouille sausage, sliced
  • 1 pound boneless chicken thighs, diced
  • 1 cup okra, sliced (fresh or frozen)
  • 1 green bell pepper, chopped
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons Cajun seasoning (adjust to taste)
  • 6 cups low-sodium chicken broth
  • 2 cups cooked white rice (for serving)
  • 1/4 cup green onions, chopped (for garnish)
  • 1/4 cup parsley, chopped (for garnish)

Instructions

  1. In a heavy-bottomed pot over medium heat, combine vegetable oil and flour to create a roux. Stir continuously until it reaches a deep brown color (about 20 minutes).
  2. Add chopped onions, bell peppers, and garlic; sauté until softened (about 5 minutes).
  3. Stir in the sliced sausage and diced chicken; cook until browned on all sides.
  4. Gradually pour in the chicken broth while stirring to prevent lumps; bring to a gentle boil.
  5. Mix in the okra and Cajun seasoning; reduce heat and let simmer for about 30 minutes to meld flavors.
  6. Serve hot over cooked white rice and garnish with green onions and parsley.
