Delicious taco-inspired sushi rolls that combine the flavors of tacos with the fun of sushi!
Ingredients

- 1 cup sushi rice (rinsed and drained)
- 1 1/4 cup rice vinegar
- 1 tablespoon sugar (for seasoning)
- 1 teaspoon salt (for seasoning)
- 1 pound ground beef (or turkey)
- 1 packet taco seasoning
- 1 cup shredded lettuce
- 1 medium tomato (diced)
- 1 cup shredded cheese (cheddar or Mexican blend)
- 4 sheets nori
- 1 avocado (sliced)
- 1/2 cup sour cream (for dipping)
- 1 tablespoon lime juice (for flavor)
Instructions
- Cook sushi rice according to package instructions. Once cooked, mix rice vinegar, sugar, and salt in a bowl and fold into the rice. Let it cool.
- In a frying pan, cook ground beef over medium heat until browned. Drain excess fat and add taco seasoning. Follow package instructions for seasoning.
- Place a sheet of nori on the sushi mat. Spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top.
- Layer taco filling, lettuce, diced tomato, cheese, and avocado on top of the rice.
- Using the sushi mat, carefully roll the nori away from you, pressing gently to form a tight roll. Seal the edge with a bit of water.
- Using a sharp knife, slice the roll into bite-sized pieces. Serve with sour cream and lime juice on the side.
