- 1 lb shrimp, peeled and deveined
- 1 can coconut milk
- 4 cups vegetable broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 bell pepper, chopped
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp lime juice
- 1/4 cup cilantro, chopped
Instructions
- In a large pot, sauté onion, garlic, and ginger until fragrant.
- Add bell pepper and cook until softened.
- Pour in vegetable broth and bring to a boil.
- Stir in coconut milk and shrimp, cooking until shrimp are pink and cooked through.
- Add lime juice and cilantro before serving.

- This soup can be served with rice for a heartier meal.
- Adjust the spiciness by adding chili flakes or fresh chili peppers if desired.
