Description

A flavorful coconut shrimp soup with vegetables.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 can coconut milk
  • 4 cups vegetable broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 bell pepper, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp lime juice
  • 1/4 cup cilantro, chopped

Instructions

  1. In a large pot, sauté onion, garlic, and ginger until fragrant.
  2. Add bell pepper and cook until softened.
  3. Pour in vegetable broth and bring to a boil.
  4. Stir in coconut milk and shrimp, cooking until shrimp are pink and cooked through.
  5. Add lime juice and cilantro before serving.
