Ingredients

  • 2 cups crushed chocolate butter biscuits (like digestive biscuits or Marie biscuits)
  • 1/2 cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1 package (3 oz) instant vanilla pudding mix
  • 2 cups cold milk
  • 12 oz whipped topping (like Cool Whip), thawed
  • 1/2 cup crushed chocolate butter biscuits (reserved from base)
  • 1/4 cup chocolate chunks
  • 1/4 cup chocolate shavings
  • 1 cup candy-coated chocolate eggs (like Cadbury Mini Eggs)
  • Optional: pastel sprinkles

Instructions

  1. Crush the chocolate butter biscuits using a food processor or by placing them in a ziplock bag and crushing them with a rolling pin. Mix the crushed biscuits with the melted butter in a medium bowl until evenly combined. Press the mixture firmly into the bottom of a 9×13-inch baking dish to create an even layer. Refrigerate for 10 minutes to set.
  2. In a large bowl, beat the softened cream cheese, softened butter, and powdered sugar together until smooth and creamy. In a separate bowl, whisk the vanilla pudding mix and cold milk together for 2-3 minutes, or until thickened. Gently fold the whipped topping into the pudding mixture until fully combined, then fold the pudding mixture into the cream cheese mixture to create a light, fluffy filling.
  3. Spread the fluffy middle layer evenly over the chilled cookie base, using a spatula to smooth it out.
  4. Sprinkle the reserved crushed biscuits, chocolate chunks, and chocolate shavings over the pudding layer. Decorate with candy-coated chocolate eggs and pastel sprinkles for a festive Easter appearance.
