Description

Delicious cookies with a hint of lemon and lavender.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened (Make sure it’s at room temperature for easier mixing.)
  • ½ cup powdered sugar
  • 1 tablespoon culinary lavender (Make sure it’s food-grade.)
  • 1 tablespoon lemon zest (Freshly grated from about 1 lemon.)
  • 12 tablespoons lemon juice (Adjust to taste.)
  • ¼ teaspoon salt
  • optional additional lemon zest (For garnish.)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, beat the softened butter and powdered sugar together until light and fluffy, about 2-3 minutes.
  3. Stir in the lemon zest, lavender, and salt. Mix to combine.
  4. Gradually add the all-purpose flour into the butter-sugar mixture. Combine until a soft dough forms.
  5. Shape the dough into a disc about ½ inch thick. Wrap in plastic wrap and refrigerate for at least 15 minutes.
  6. Once chilled, roll the dough out on a floured surface to about ¼ inch thick.
  7. Cut into desired shapes using a cookie cutter and place them onto the prepared baking sheet.
  8. Bake for 12-15 minutes or until the edges are lightly golden.
  9. Allow the cookies to cool completely.
  10. For icing, combine powdered sugar with lemon juice until you reach a thick but pourable consistency. Drizzle over the cooled cookies and top with additional lemon zest, if desired.
