Description

A hearty taco beef casserole made with ground beef, diced tomatoes, mixed vegetables, and topped with cheese and potato chips.


Ingredients

  • 1 lb lean ground beef
  • 1 can (14 oz) fire-roasted diced tomatoes
  • 2 cups frozen mixed vegetables
  • 1 packet (1 oz) taco seasoning
  • 2 cups shredded sharp cheddar cheese
  • 1 cup crushed potato chips

Instructions

  1. Brown the ground beef in a skillet over medium heat until no longer pink; drain excess grease.
  2. Stir in diced tomatoes (with juice), frozen mixed vegetables, and taco seasoning until well combined.
  3. Transfer the mixture to a slow cooker, stirring to distribute evenly.
  4. Layer half of the shredded cheese on top of the mixture.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. About 30 minutes before serving, sprinkle crushed potato chips over the melted cheese layer.
  7. Serve hot with optional toppings like sour cream or jalapeños.
