- 1 cup jasmine rice
- 1 cup coconut milk (full-fat)
- 1 cup water
- 1/2 teaspoon sea salt
- Optional garnish: fried shallots, chopped fresh cilantro, lime zest
Instructions
- Rinse the jasmine rice under cold water using a fine mesh strainer until the water runs clear.
- In a medium saucepan, combine the rinsed rice, coconut milk, water, and salt. Stir gently.
- Bring the mixture to a gentle boil over medium heat.
- Once it begins to boil, reduce heat to low, cover with a lid, and simmer for 15 minutes. Do not lift the lid.
- Turn off the heat and let the rice sit covered for another 10 minutes.
- Fluff the rice gently with a fork before serving.
- Garnish with fried shallots, fresh cilantro, or lime zest if desired.
